- En una cacerola “grande” 15 litros aproximadamente, agregar la sal entrefina o gruesa y poner a Hervir el Maíz y a los 5 minutos los porotos, 30 minutos después agregar el zapallo cortado en cubos de 3x3 cm.
- En otra cacerola saltar la cebolla cortada en cubos pequeños en aceite de girasol o maíz, cuando la cebolla esté dorada agregar el morón cortado en cubos de 1x1cm, el chorizo cortado en rodajas, la panceta en cubos y la carne cortada en trozos pequeños. Saltar por 5 minutos más, no agregar sal!!.
- Por último unir todo en la cacerola grande, agregar una lata de puré de tomates corregir con sal, pimienta y ají molido a gusto, mezclar bastante, si es necesario agregar agua caliente para que la mezcla no se apelmace, dejar cocinándose a fuego mínimo 3 horas (ir revolviendo para que no se pegue y controlar el fuego para que quede “cremoso”)
- Por último se pueden agregar otras especias, como orégano, pimentón, perejil, etc. Antes de servir picar una cebolla de verdeo y agregar un poquito al plato para presentarlo y realzarle el gusto! (Si lo dejan reposar desde la noche anterior y lo recalientan en la misma cacerola va a estar muuucho mejor aún).
