Siempre me han gustado las albóndigas en salsa que hace mi madre a compañadas de un arroz blanco y un huevo frito. Este es uno de mis platos preferidos.

- 500 gr carne picada
- Pan rallado
- 2 huevos
- 1 vaso leche
- 5 dientes ajo
- 1 cebolla
- 3 zanahorias
- 2 tomates
- Perejil

- Preparamos ahora una cazuela, preferiblemente baja, con un chorrito de aceite. Echaremos la cebolla picada y la zanahoria y la iremos pichando a fuego medio y echaremos 2-3 dientes de ajo picados en trozos grandecitos. Echamos una cucharada sopera de harina.
- Después añadiremos perejil picado y los dos tomates que previamente habremos pelado y troceado en trozos pequeñitos, un pizca de sal (a gusto) y dejaremos que se haga un poco. A los 3-4 minutos echamos un chorrito de vino blanco (yo suelo usar verdejo) y dejamos reducir.
- Echaremos ahora dos vasos de agua y medio (no hace falta que queden cubiertas las albóndigas). Añadimos media pastilla de caldo de carne y removemos bien y ponemos el fuego fuerte para que hierva.
- Una vez que empiece a hervir echamos las albóndigas y lo dejamos a fuego medio-bajo que hierva durante una hora aproximadamente.
- Ahora, para quien le gusta una salsa espesita y sin tropezones se pueden sacar las albóndigas y pasarlo por la batidora y después volver a añadir las albóndigas.
- Ahora ya sólo queda acompañarlas de arroz blanco y un huevo frito.
