- Una vez reservada la sepia picamos una cebolla
- Pochamos la cebolla a fuego lento con aceite y un diente de ajo para aromatizar, hasta que consigamos un color rubio oscuro
- Mientras la cebolla se pocha rallamos el tomate
- Una vez la cebolla esta cogiendo color añadimos el tomate
- Cuando el sofrito tiene un color oscuro ya y textura de mermelada añadimos la sepia y la cocinamos a fuego lento para que quede blanda
- Mientras la sepia se cocina en un bol ponemos la carne picada, el huevo, y el pan(mejor si es de miga) previamente remojado en leche. salpimentamos y sazonamos al gusto.
- Mezclamos bien hasta obtener una mezcla homogénea
- Boleamos y enharinamos para posteriormente sellar en aceite.
- Una vez selladas las añadimos al sofrito
- Mezclamos todo bien y cubrimos de agua y dejamos cocinar
- Mientras se cocina el guiso ponemos en un mortero los frutos secos, el ajo frito y el pan, lo picamos todo bien y lo reservamos
- Añadimos la picara al guiso enlos últimos minutos de cocción. apagamos fuego y dejamos que repose un poco. empatamos con su salsa
