- Cuando hemos mezclado la picada con el sofrito, añadiremos el caldo de marisco, un poco de salsa perrins y dejaremos cocer unos minutos.
- Ahora procederemos a preparar la sepia. Primero la cortaremos a dados.
- Una vez tengamos la sepia bien cortada la marcaremos, antes de ponerla con el sofrito + caldo de marisco + picada, la rehogaremos unos 3 minutos.
- Ahora añadiremos la sepia en la base de la salsa de albóndigas.
- Añadimos a continuación las albóndigas y el caldo de marisco, dejaremos cocer unos 40 minutos.
- Dejamos reducir hasta encontrar el punto de espesor correcto para nuestra salsa.
- 40 minutos después, añadiremos los guisantes.
- Añadiremos cebollino cortado a trozos. para darle un punto de frescura al plato.
- Cocemos el guisante los últimos 5 minutos.
- Finalmente, emplataremos: añadiremos cebollino y sal de algas, para potenciar el sabor marino.
