- 1/2 taza apio licuado
- 2 tazas agua (caldo de vegetales preferible)
- 2 oz oporto
- 1 cdta azúcar
- 1/2 taza leche entera

- 4 hojas culantro simarrón
- 1/2 taza cilantro fresco recién picado
- 1/2 taza aceite de oliva

- Albóndigas: mezclamos cilantro, ajo, Oporto y salsa para integrarla luego en la carne. En este sofreímos las cebollas, pimientos y ajos picados por unos 4 minutos, sazonamos y revolvemos para soltar el caramelo de carne del fondo, sazonamos. Ahora sofreímos la pasta de tomate, y revolvemos para que no se pegue, por 3 minutos. Luego agregamos el licuado del apio, la zanahoria, tomates, culantro, agua y oporto al sofrito.
- Esto lo cocemos por 20 minutos revolviendo en cada cuantos, a fuego medio, debe ser un hervor lento para lograr espesar y cocer los vegetales, agregamos la leche, azúcar, el cilantro fresco picado, las albóndigas con su jugo, rectificamos sal para darle uno 15 minutos más de cocción muy suave, que termine la cocción y se integren sabores.
- Yo la use sobre bucatinis al dente calientes, quedó espectacular.
